Duck with apples is great for the holiday menu. The dish turns out to be spectacular, tasty and immediately evokes the appropriate mood. In order for the meat to turn out tender, and the crust is ruddy, it is necessary to take a responsible approach to the preparation and processing of the carcass and observe the baking conditions. It is better to choose apples with sourness - they set off the taste of poultry well and bake better.

We clean the duck from dirt and singe it over the stove. Remove the rest of the feathers. We wash the carcass thoroughly in water and dry it with paper towels. Cut off areas with excess fat. Rub the carcass with salt and black pepper on the inside and on the surface. Peel the chives, rinse, dry and pass through a press. We also rub the duck with garlic gruel after salt and pepper. We wrap the bird in plastic wrap and leave to marinate for several hours in the refrigerator.
