Duck with apples is prepared quite simply, and the result is striking in its appearance and rich taste. It is very important to set aside enough time to marinate the carcass so that it becomes juicy and absorbs the aromas of the spices. Do not peel the apples for the filling, so they will retain their shape and will not creep into porridge. It is very convenient to use a sleeve for baking - it will ensure uniform baking of the carcass, its juiciness, as well as the cleanliness of the oven.

We thoroughly wash the duck carcass from the outside and from the inside, cut off the fat in the tail and neck area, cut out the remnants of the insides inside. Singe if necessary. Then we dry the carcass from the inside and outside with paper towels.

To prepare the marinade, mix mayonnaise, soy sauce, salt and black pepper in a small bowl. Peel the garlic and pass it through a press. Add the resulting gruel to a bowl.

Stir all the components of the marinade until smooth.

Grease the prepared duck with marinade from all sides, inside and out. We place the carcass in the refrigerator and leave to marinate for five to six hours. It is convenient to leave it overnight, and in the afternoon start baking.

When the duck is marinated, prepare the apples. We wash them and dry them. Cut out the seed pods. You can preserve the intactness of apples by using a special knife to extract the seeds. Or you can cut it into quarters and remove the core in the usual way.

Fill the duck's abdomen with prepared apples. The edges of the skin covering the abdomen are tightened. You can chop them off with toothpicks for reliability.

We place the prepared carcass in the baking sleeve, tie both edges of the sleeve. We make a thin puncture in the center so that steam can escape. We place the duck in the sleeve on a baking sheet and put it in an oven preheated to 200 degrees. Bake for two hours, until the crust on the surface is well browned.
