An easy recipe for duck with potatoes. We clean and cut the potatoes, chop the duck, add the spices and put everything together in a mold. Cover with foil, put in the oven and “forget” for two hours. Duck meat softens well and becomes tender, and neutral potatoes absorb aromatic fat and become much richer in taste. By the way, we recommend adding apples to the potatoes - they will provide a slight sourness and emphasize the natural taste of duck meat.

Peel the potatoes, rinse and dry. We cut the tubers into circles with an approximate thickness of five to seven millimeters.

Wash the apples, dry them and cut them into quarters. Cut out the seed pods. Then we cut the parts of the apples into slices.

Grease the baking dish with odorless vegetable oil. We lay out the potatoes and apples in layers, sprinkling them with salt and black pepper to taste.

We clean the duck carcass from dirt, singe it, if necessary, cut off the fatty areas in the neck and tail area, wash it. Then we cut the carcass into small portions.

Rub each piece with salt and chicken spice mixture. We spread the duck on the potatoes with apples. Pour in half a glass of hot water.

Cover the form with a piece of foil, turning the shiny side inward. We crimp the edges well for tightness. Preheat the oven to 180 degrees and put the dish on the middle-lower level. We bake for one and a half to two hours until the poultry is soft.

After the specified baking time has elapsed, remove the foil and let the dish brown for another ten to fifteen minutes. Pieces of duck can be drizzled with fat on top for a glossier crust. We take the finished dish out of the oven and serve it hot. Sprinkle with fresh herbs if desired.
