Duck in the roaster with slices in the oven

We offer a simple recipe for cooking duck in pieces in the oven. In addition to duck, you only need salt, black pepper, onions, garlic and a little vegetable oil. With such a minimal set, the bird turns out to be very tasty, juicy and rich. We recommend soaking the duck in water and vinegar before baking. This is especially true for poultry: due to soaking, a specific smell will go away, and the meat will be more tender.

We clean the duck carcass from dirt, remove the "hemp" from the feathers, if necessary, we singe it. Cut off areas with excess fat. Then rinse the duck well in water and dry it with a towel. We cut the bird into portions at the joints.

We put pieces of duck in a suitable volume of dishes, fill with cold water so as to completely cover them. We also add the specified amount of vinegar to the water. We leave the bird to soak for ten to twelve hours.

After the soaking time has elapsed, drain the water completely. Sprinkle the pieces of poultry with salt and black pepper to taste. Peel the garlic and pass it through a press. We spread the resulting gruel to the duck.

Rub each piece of poultry with a mixture of salt, pepper and garlic with our hands. Then pour in the vegetable oil and mix the duck pieces again so that each of them is covered with both oil and spices. We leave the duck to marinate for six to seven hours.

Peel the onions, wash, dry and cut into thin semicircles. Grease the duck with a small amount of vegetable oil and put the prepared pieces of duck into it. Spread the onions evenly on the surface. We close the lid and put in an oven preheated to 180 degrees on the middle-lower level. We bake for two and a half hours.

After the indicated time, open the lid of the roaster and let the surface of the pieces brown for half an hour. Then we take the duck out of the oven, slightly cool the contents. We spread the duck pieces on portioned plates and serve hot with a side dish.
