Any dishes prepared with the addition of black mountain ash are considered almost medicinal in many parts of our vast country. Berries contain a huge amount of vitamins and minerals that are no longer found in any other berry growing in our climate. And in combination with apples, you can prepare not only a healthy dessert, but also very tasty.

We carefully sort out the rowan, leaving only whole and dense fruits, remove the leaves and twigs. We wash the selected berries and put them in a colander, put them in a saucepan with boiling water right in this form and leave for 4-6 minutes. Then we take it out and put it in very cold water until it cools completely.

We do not pour out the water in which the blackberry was blanched, but prepare syrup from it. Pour half a kilogram of granulated sugar into the broth, mix thoroughly and bring to a boil over low heat.

Add the berries to the boiling syrup and cook for no more than 4-5 minutes, then remove from the stove and leave to soak for at least 10 hours.

After the time has elapsed, return the container to the fire, add another kilogram of sugar and bring to a boil.

We wash the ranetki, remove the skin and cut out the core along with the seeds, cut into small cubes.

Add prepared apples to the bowl with mountain ash and mix gently.

After the mass boils, boil to the desired consistency (15 to 30 minutes). A few minutes before turning off the heat, add the lemon and stir everything again.

Pour hot jam into pre-sterilized jars and twist. Store in a dark and dry place out of direct sunlight.
