For an apricot "five-minute" with walnuts, a single boil for five minutes is not suitable. After all, such a jam is capricious and will ferment quickly. We prepare jam with nuts by boiling 3 times for five minutes with infusion of fruits in sugar syrup for 7-10 hours. This option is laborious and not cheap, but the taste of the dessert will be extraordinary, so this jam is called royal.

Rinse dense and unripe apricots well with cold water. Then cut each fruit along the groove, remove the seeds and instead put a piece of walnut in the middle. Thus, stuff all the apricots with nuts.

In a bowl for making jam, boil the syrup from the amount of sugar and water specified in the recipe. The amount of sugar can only be reduced by storing the jam in a cold place. Gently put the apricots stuffed with nuts into the hot boiling syrup, add a couple of currant leaves for a special aroma and boil the jam for exactly 5 minutes from the beginning of the boil. Then turn off the heat and leave the jam to cool for 10 hours.

After this time has elapsed, re-boil the jam for five minutes from the beginning of the boil, remove all the foam from the surface and leave again for 7 hours to cool.
