This is an apricot jam recipe for those who love a sweet dessert with sour notes. The citrus fruits (lemon and orange) in this jam give a pleasant aftertaste. Prepare this dessert from light, almost white apricots and asymmetrical in shape, because from such fruits the dessert will turn out to be successful.

Rinse the apricots well under running water, cut them into halves and remove the seeds. Then cut the apricots into smaller pieces, transfer them to the jam pot and add the required amount of sugar. Shake the saucepan several times so that the sugar is evenly distributed between the pieces of fruit, and leave them for 1 hour.

Rinse the lemon and orange with a brush to remove any chemicals from the surface. Then, use a fine grater to remove all the zest from the fruit and transfer it to the apricots. Gently select the pulp with your hands and cut it into small pieces.

Transfer the citrus pulp to the apricots and add the juice of one lemon. Place the saucepan over high heat, bring to a boil and then simmer the jam over low heat for 50 minutes. Shake the saucepan several times during cooking so that the jam does not burn.
