Watermelon Peel Jam

An easy way to make good use of your watermelon rind. Such jam will taste more like apple jam, and at the same time it will be completely different from watermelon pulp jam.

In this case, the thicker the rind of the watermelon, the better. Cut them off after rinsing the watermelon itself, then remove the tough green layer and cut the rest into small cubes. Transfer them to a deep bowl, cover with sugar and refrigerate overnight.

Unload the watermelon peels into a saucepan and put it on fire. Cook the contents over medium heat for 20 minutes, stirring regularly, then add the crumbled lemon and simmer for another 5 minutes. Remove the saucepan from the stove and let it cool for 4 hours.
