Prepare the watermelon rind first. Rinse them under running water and cut off any remaining pink pulp and tough green skin.

Dissolve the soda in warm water and soak the peel in the resulting solution. Soak them in it for several hours, then rinse under running water.

Pour half of the total sugar into a saucepan and pour 3 cups of water. Place on the stove, bring to a boil, stirring constantly, and simmer over medium heat until lightly thickened. Add watermelon rinds to the resulting syrup and stir.

Boil the mixture for 5-10 minutes, then leave to cool completely, usually it takes a couple of hours. Then the jam must be brought to a boil again and cook for 10 minutes, stirring regularly. After, leave to cool and infuse for another 8-10 hours, then boil for the third time. At the same time, add spices, juice and lemon zest, mix everything thoroughly and cook for a total of 10 minutes. Then put it in jars, if you want to keep such jam until winter, roll it up on a turnkey basis.
