Watermelon Peel Jam with Orange

This jam is a transparent amber candied fruit in citrus syrup.

Cut off the hard green layer from the previously washed crusts and cut into small cubes. Boil water in a saucepan, dip the watermelon rind in there, blanch for 10 minutes, then drain the water.

Pour water into a saucepan and add sugar. Put on fire, bring to a boil, stirring constantly, and cook over medium heat until sugar is completely dissolved and slightly thickened.

Rinse the lemon and orange and remove the zest from them on a grater, and cut the pulp into small pieces and grind with a blender into a homogeneous mass. For a clearer, fiber-free jam, simply squeeze out the juice. Make sure that no bones get into the juice or puree.

Meanwhile, add the zest to the boiling syrup, stir and cook for a few minutes.

Add the blanched watermelon rind there and continue to cook over low heat for 7-10 minutes. Then remove from heat and leave to cool completely. It is best to let the jam settle overnight. After that, put the pan on the fire again, bring the contents to a boil and cook for 15 minutes, then cool to room temperature.

Bring the jam to a boil a third time and cook for 10 minutes. Then spread over the prepared jars and, if desired, roll up on a turnkey basis to keep until winter.
