Watermelon Peel Jam with Citric Acid

Delicious jam with only 4 ingredients. We roll up the summer with vitamins in a jar and feast on them throughout all the cold weather.

We prepare the crusts, remove the green skin and the remnants of the pulp.

Cut the crusts into slices and transfer to a deep bowl or saucepan.

Fill the pieces with cold water so that all the chemistry comes out. An hour will be enough, but if time permits, it is better to soak them overnight.

We drain the water and rinse the crusts thoroughly. We transfer them to a saucepan, cover with sugar and leave for an hour or two.

When our crusts have released enough juice, put the pan on the fire and bring to a boil. Reduce heat and cook for another 20-30 minutes, then add citric acid and cook for another 10 minutes.

Turn off the gas and let the jam cool, then boil it again for 20-30 minutes. At this stage, you can add, for example, cinnamon.
