Watermelon Peel Jam with Lemon

Unusual jam that will surprise your household and guests. Contrary to the name, the jam made from watermelon peels tastes completely different from the watermelon itself, it is rather closer to apple jam, but more interesting and richer.

From the watermelon peels, to make this jam, you need exactly the white part of them. Therefore, cut off the tough green rind and pink flesh, if any. Cut the rest into medium sized cubes.

The next step is to soak the crusts in a soda solution so that they become as transparent as possible during cooking. To do this, dilute the baking soda in warm water and put the cubes in it. Soak them in the solution for about 3 hours, then drain the liquid and rinse the crusts under running water. Place them in a bowl, cover with an even layer of sugar on top and leave for 2-3 hours.

After this time, a sufficient amount of juice should be released from the crusts. Transfer the entire contents of the bowl to a saucepan and place over medium heat.

Bring the crusts and juice to a simmer, simmer for 10 minutes, stirring constantly, then remove from heat and let cool.

When the jam has cooled to room temperature, place the pot back on the stove and bring to a boil. Boil it for another 5-7 minutes, remove from heat and cool.

Before the third cooking, cut the lemon into small pieces together with the skin and add to the jam. Bring the mixture to a boil, mix thoroughly and cook for 5-7 minutes.

The resulting jam can be either stored in the refrigerator or rolled up in a jar and left until winter, this is at your discretion.
