Each of us in late summer - early autumn feasts on watermelon, but few people know that not only the juicy red part of this berry can be used in food. Almost everyone throws away watermelon peels, but there are culinary recipes for jam from watermelon peels, and I'll tell you about one of them now.

First, prepare the crusts. The coarse green skin must be cut off.

Cut the peeled crusts into large squares. You can make the jam not only tasty, but also beautiful by cutting the crusts with a curly knife.

Now you need to soak the crusts in a soda solution. To do this, we dilute 2 tablespoons of soda in 2 liters of water. This is to keep the crust crisp after boiling. We leave them in water for 3 hours, and then drain the water and rinse well. Pour the remaining water into a saucepan and pour in the sugar, bring to a boil and transfer the pieces of watermelon to the syrup.

Cook until boiling, then reduce heat and boil for another 10-15 minutes. We remove the pan from the heat and leave our jam to brew. It is best to leave it overnight, covered with a towel, so the pieces are better saturated with syrup.

We continue to cook the crusts. Bring to a boil and boil for another 10 minutes over low heat, turn off and let cool completely

Bring the jam to a boil again, add lemon, cloves and vanillin and cook for an hour.
