To get the most intense red cherry jam, you should cook it without adding additional water. To protect the berry mass from burning, before cooking, be sure to let the cherries stand with sugar until the juice is released. It is recommended to cook the jam in a gentle way in order to preserve the shape of the berries as much as possible.

We thoroughly wash the cherries from dirt, discard the berries with defects. Let the washed cherries dry a little and peel them.

Place the pitted cherries in a bowl for making jam.

Fill the cherries with sugar and let them stand at room temperature for five to six hours. During this time, a certain amount of juice will be released. We put the dishes with berries on the stove and bring to a boil. Cook for five to seven minutes. Remove the resulting foam. After the specified time has elapsed, remove the jam from the stove and let it cool completely.

After cooling down, put the jam on the stove again and bring it to a boil. We continue cooking for five to six minutes. We repeat this sequence one more time. We increase the time of the last cooking to twenty minutes in order to boil the jam to a thicker state. We pack hot jam in pre-sterilized jars and close with dry sterile lids. Let the jam cool in jars and put them in a storage place.
