Cherry jam, prepared without removing the seeds, retains its shape well, and the seeds give it a light tart taste. Lemon will give the jam a fresh citrus flavor and will keep the jam from becoming sugared during storage. Sweet cherries, both white and dark, are suitable for cooking, only preferably with dense pulp. The jam is prepared by the method of 2-fold cooking with breaks of 5-6 hours.
