Sweet cherry is a pretty sweet berry. To dilute the sweetness of cherry jam, you can use lemon to add sourness and a refreshing citrus scent. Cinnamon will also come in very handy - its recognizable note is perfectly combined with the sweetness of sweet cherry and with a citrus accent.

We sort out the cherries. We throw away twigs, leaves, random debris and defective fruits. Rinse the berries thoroughly with running water. Let the water drain by placing the cherries in a colander. We clean each berry from the stone. Place the peeled cherries in a bowl for cooking jam and cover with granulated sugar. Stir, cover the dishes with a towel and leave for five to six hours for the juice to stand out.

After the specified time, we put the container on the stove and bring the contents to a boil. With occasional stirring, cook the jam for fifteen minutes. Remove from the stove and let the jam cool completely.

After cooling down, put the container on the stove and bring the jam to a boil again. While the jam is heating, rinse the lemon thoroughly with running water. We cut it into thin pieces. Along the way, we must remove the seeds, since they can give bitterness in the finished jam. After boiling, add lemon slices to the jam. Stir and boil the jam at a boil of medium intensity for twenty to thirty minutes. Add the cinnamon five minutes before the end of cooking and stir.

We pack hot jam in pre-sterilized, dry jars and close with dry sterile lids. Let the jam in jars cool completely and put it in a cool dark place for storage.
