Blueberry and blueberry jam

Blueberries and blueberries have a very similar appearance and taste. The jam from them turns out to be tender and does not taste bitter. When properly prepared, this jam retains its taste for a long time and does not become sugared. It is prepared by the method of 2-fold cooking.

Sort the blueberries and blueberries carefully, especially when harvested with a food processor. Remove all small debris and damaged berries. Then rinse them under running water.

Transfer the prepared berries to a saucepan for cooking jam and cover them with the calculated amount of sugar. Cover the pot with a napkin and leave the berries in the sugar for 4 hours to give them enough juice.

After this time, put the saucepan with berries over medium heat and bring to a boil. Remove all foam from the surface. Cook the jam for 10-15 minutes over low heat. When cooking the jam, stir gently with a wooden spoon. Then turn off the heat and leave the jam for 4 hours to cool the berries.

Then bring the jam again to a boil over medium heat and cook for another 10-15 minutes, already over low heat. By the end of cooking, pour lemon juice or a little citric acid into the jam and add vanillin.
