According to this recipe, you will make aromatic and not very thick currant jam, and most importantly - without any chemical additives. Delicate currant berries will float in a thick syrup. You can increase the density of the jam by lengthening the cooking time. The recipe "7 glasses" is very convenient when calculating the ingredients when harvesting a large amount of currants.

Separate the currant berries from the twigs, remove all debris and rinse the currants with running water. Measure out the required amount of berries with a glass and pour them into a bowl for making jam.

Pour water to the berries and place the dishes over medium heat. Bring the currants to a boil, stirring occasionally with a wooden spoon to keep them from burning.

Boil the currants for 5 minutes from the beginning of the boil and add half the calculated amount of sugar to it. Then reduce the heat to minimum. Stir the jam with a spoon until the sugar is completely dissolved and turn off the heat. Cover the dishes with jam and leave for 5-6 hours until they cool completely.
