In this recipe, you are invited to make currant jam with dry or fresh ginger. The delicate taste of ginger plays well with the currants, and you will have a dessert with an unusual piquant taste. We prepare the jam using 3-time cooking methods for 5 minutes.

Separate the black currant berries from the twigs and remove debris and damaged berries. Then rinse the currants well and discard in a colander to remove excess moisture.

Pour water into a saucepan for cooking jam, add sugar in the calculated amount and stir so that the sugar is completely dissolved.

Bring the resulting syrup to a boil.

Transfer the prepared currants to the boiling syrup and immediately add the ginger. If you have fresh ginger, then chop it into a fine grater. Cook the jam over low heat for 7 minutes from the start of the boil and turn off the heat. Leave the jam to cool for 1 hour and then repeat the cooking process. Re-cool the jam for an hour and cook a third time. Pour hot jam into a dry sterile jar and seal it hermetically.
