Wild Pear Jam

Wild pears are generally inedible, as they are very hard and tasteless, but they make an excellent jam, which is not inferior in its aroma and taste to jams from noble varieties. In order for the pears to become saturated with syrup and acquire their own taste, they need to be boiled 3-4 times with a break to cool. In the finished jam, the wilds will become a beautiful dark red color.

Sort out the wild pears and remove the damaged fruits that have begun to deteriorate, because the wild pear begins to rot quickly, which will ruin the dessert. Then rinse the pears well in warm water. Transfer them to a saucepan for making jam, add the calculated amount of sugar and lemon and pour in clean water.

Put a saucepan with pears over medium heat and bring to a boil. Boil the pears for 15 minutes from the start of the boil, then leave to cool to room temperature for 5-6 hours.

After this time, cook the pears on low heat for another 15 minutes and cool the jam again. Repeat this cooking with subsequent cooling 4 times.

After the 4th cooking, put your beautiful wild pear jam in pre-sterilized jars and roll up with boiled lids. Cool the jars of jam without turning over or covering with a "fur coat", and then transfer to the storage location.
