Wild cherry jam

Wild cherry differs from ordinary cherry in fruit size and more distinct sourness. Wild cherry jam is as delicious as regular cherry jam. Adjust the amount of granulated sugar yourself. Our family does not like sugary jam, so I give these proportions.

Prepare your cherries. Buy or assemble yourself.

Put the cherries in a sieve, rinse thoroughly and let the excess liquid drain.

Put some of the berries in a saucepan in which you will cook the jam. It is advisable to take a saucepan with a thick bottom.

Sprinkle with some granulated sugar on top.

Then lay out the remaining berries.

Cover with granulated sugar again.

Leave the cherries, covered with a lid, for about 8-10 hours, but preferably overnight. During this time, she will let the juice out well.

Place a saucepan with cherries over medium heat. Bring to a boil. Remove the resulting foam from time to time. Reduce heat and simmer for about 10-15 minutes. Remove from heat and cool completely, on average it will take about 10 hours.

Then again put on medium heat, bring to a boil. Remove from heat immediately and leave to cool completely again for 10 hours.

In the meantime, prepare the jars, wash thoroughly and sterilize in the microwave, oven, or water bath. Pour boiling water over the lids. Jars and lids must be completely dry. Put the jam on the fire again and bring to a boil.

Cook the cherry jam over medium heat for about 7-10 minutes. Using a ladle, carefully pour the hot jam into sterile jars. Tighten jars of wild cherry jam with sterile lids and turn upside down. Leave as it is until it cools completely. Then turn the jars over and move them to a dark place for long-term storage.
