Blackberry jam with lemon

Jam from this berry is in no way inferior in its properties to strawberry or raspberry jam. The lemon will give it a citrusy aroma and sourness and allow the jam to preserve better. The jam can be cooked once, then it will be thin, but the berries will remain intact. You can make 2-3 boils with a break, then you will have a thick dessert.

Ingredients

Cooking process

step 1 out of 6
In a saucepan, boil the syrup with the amount of water and sugar specified in the recipe.
step 2 out of 6
Rinse the lemon well, remove the zest and squeeze the juice.
step 3 out of 6
Sort out the blackberries from small debris and remove the stalks. Rinse the berries carefully and transfer to boiling sugar syrup.
step 4 out of 6
Cook the jam over high heat for 5-7 minutes. At this time, there will be a lot of foam on the surface, so quickly remove it with a spoon. After 5-7 minutes, put the lemon zest into the jam and pour in the lemon juice. Stir the jam, cook for a couple of minutes and turn off the heat. Remove the remaining foam from the surface of the jam with a paper towel. If you wish, you can repeat the cooking 2 more times with a break for cooling, then the jam will be thicker.
step 5 out of 6
Pour hot jam into sterile jars and roll up immediately. Turn the jars upside down and cover with a warm blanket overnight.
step 6 out of 6
Your dessert with whole blackberries and lemon flavor is ready.

Enjoy your tea!
