After 5-7 minutes, put the lemon zest into the jam and pour in the lemon juice. Stir the jam, cook for a couple of minutes and turn off the heat. Remove the remaining foam from the surface of the jam with a paper towel. If you wish, you can repeat the cooking 2 more times with a break for cooling, then the jam will be thicker.
