Pear jam with ginger

Today we will prepare a delicate and aromatic pear jam with ginger, which gives the jam pleasant spicy notes and an interesting aftertaste. We also added lemon zest and lemon juice to the jam, which add a slight sourness and an amazing citrus aroma. During the cooking process, the texture of the pears becomes soft, so the jam has a pleasant, delicate texture.

For jam we select hard ripe and sweet pears. We wash them under warm running water and put them on a kitchen towel so that they dry from the water. Then we cut the pears in half, remove the stalks and seeds, and cut the pears into small wedges.

Rinse a piece of fresh ginger and rub it on a fine grater.

Rinse the lemon, dry it with a towel. Using a special or regular grater, rub the lemon zest, carefully removing only the yellow part. Then we roll the lemon on a hard surface, pressing it with the palm of your hand so that it becomes slightly softer. Then we cut it in half and squeeze out the juice.

Put chopped pears, ginger, zest and lemon juice in a saucepan with a thick bottom, fill everything with sugar and leave it for 5-6 hours so that the sugar dissolves and the pears are juiced. After a while, put the pan on medium heat, bring to a boil, reduce heat and boil the jam for 15 minutes, then remove from heat. Let the jam cool completely and repeat the procedure twice more.

After the third cooking, we put the hot jam on sterilized jars and tighten it tightly with boiled lids. We turn the jars upside down and leave to cool completely at room temperature, after which we remove the jam for storage in a dark, cool place.
