Wild Pear Jam

According to this original recipe, you can make a gorgeous dessert from wild pears. The pears are boiled whole, the tails are not removed, and you will get pears like lollipops. The syrup in this jam will be jelly-like, and a sprig of mint will add a refreshing taste. In this recipe, it is important not to disturb the ratio of pears, sugar and water. Any game is suitable for jam: forest, lemon or rotten, just to be small.

Wash the wild pear well and prick each fruit with a fork or in several places with a toothpick.

Put the washed bunch of mint and the prepared pear in a saucepan. In another saucepan, boil the syrup using the amount of water specified in the recipe. Pour the boiling syrup over the pears with mint. Leave them on for 6 hours to cool down to home temperature. Place a flat plate on top of the pears and place a small weight so that the pears are completely submerged in the syrup. Then re-bring the cooled jam over high heat to an active boil, turn off the heat and again leave the pears to cool completely. Repeat this cooking process while cooling down three times after 6 hours.

For the fourth time, cook the pears in syrup for a few minutes. The fruits will turn out not cooked, but transparent and soaked in syrup.

Sterilize the jars and lids in advance using any method. Spoon the pears into jars and pour over the remaining syrup.
