Figs are covered with granulated sugar, after which they are put on the fire and cooked in three approaches. During the last boil, citric acid is added. The jam is poured into sterilized jars and rolled up.

Rinse the figs thoroughly under running water, dry them with a paper towel and cut off the top from each berry.

We transfer the figs to a saucepan with a thick bottom, cover it with granulated sugar and leave it for several hours until the juice comes out.

Put the saucepan over low heat and bring the contents to a boil. Cook for 5 minutes, remembering to remove the foam, and remove from the stove.

Let the jam cool completely, then bring it to a boil again and cook for 5 minutes. Remove from heat and cool completely. We repeat this procedure 2-3 more times.

For the last time, add citric acid to the jam, bring to a boil and cook for 10-15 minutes. We pour the still hot mass into previously sterilized cans and roll them up with lids. Let it cool completely and put it in a cool dry place for storage. Serve with hot tea or coffee. Bon Appetit!
