To begin with, a sugar syrup is prepared, to which orange peel and lemon juice are added. Then the figs are sent to the pan and the jam is cooked in 5-6 approaches. It is laid out in banks and closed tightly.

Rinse the orange and lemon thoroughly under running water and dry them with a paper towel. Remove the zest from the orange on a fine grater and set it aside. In a saucepan with a thick bottom, pour granulated sugar, fill it with drinking water and put on fire. Bring to a boil and add the orange zest.

Stir constantly and squeeze the juice of half a lemon into the syrup.

We wash the figs in cold water and put them in a colander so that all the liquid is glass. Cut off the top of each berry and cut it crosswise at the base.

We send the figs to the sugar syrup and bring to a boil over medium heat. Remove the pan from the stove and let the jam cool completely.

We repeat the previous step 5-6 more times, periodically removing the resulting foam. Figs should become almost transparent.
