From this unusual berry, you can prepare aromatic jam for the winter without boiling, which will save all the vitamins in it and make the dessert extremely useful. Irga quickly deteriorates, so you need to prepare the jam immediately after harvesting.

Sort out the berries of a sirgi carefully, removing small debris, stalks and damaged fruits. Then place the irga in a colander and rinse well with running water. If the peel of the berries is dense, then pour boiling water over the berries for 2-3 minutes.

Pour the washed berries on a towel and dry them for an hour.

Then chop the berries into a homogeneous puree using a blender or meat grinder.

Pour the calculated amount of sugar into the berry puree, mix everything and leave the berries for 20 minutes so that the sugar dissolves well. Add citric acid to the berries and stir again.

Transfer the crushed irga with sugar into sterile jars, without filling them to the very top. Sprinkle a tablespoon of sugar on top of the jam so that it does not come into contact with the lid and does not become moldy.
