Prepare all the ingredients you need. Wash the zucchini, mint leaves, and lemon thoroughly. Pour over the lemon with pre-prepared boiling water. Measure out the required amount of granulated sugar.

If using large zucchini, peel with a vegetable peeler, using a tablespoon, remove the core with seeds. Cut the peeled zucchini into small cubes, put in a container with a thick bottom and cover with the required amount of granulated sugar. Cover with a clean tea towel and let sit for about 1.5-2 hours.

During this time, a sufficient amount of juice will be released, and the pieces of zucchini will soak in the syrup. Put the container with the contents on medium heat, bring to a boil, and then reduce the heat and cook the jam for another 10-15 minutes. Then remove from heat and cool completely. Repeat this procedure.

Remove the zest from half of the lemon using a fine grater. Then peel the lemon. Cut the pulp into small pieces, after removing the partitions and bones.

Add chopped lemon and zest to the squash jam, put on medium heat, bring to a boil, reduce heat and cook the squash jam for another 10-15 minutes. Grind clean mint leaves until smooth by placing in a blender bowl.

Add chopped mint to the jam, stir and cook the jam for another 10-15 minutes. Wash the jars thoroughly and sterilize in a microwave oven, oven or water bath. Pour boiling water over the lids or boil in a separate container.
