Strawberry meadow jam

Meadow strawberry has a special, incomparable aroma. The berries taste sweet, pleasant and memorable. Fresh meadow strawberries, although well stored, are relatively short-lived. The best way to preserve berries for the winter is with jam. You will have to work hard to free meadow strawberries from sepals - they are very tightly attached to the berry. But if you find helpers, the process will go more fun and faster.

We sort out the berries before washing: remove random garbage, leaves, stems. If you come across defective copies, they should be thrown away. Separate the sepals from the berries.

Place the peeled meadow strawberries in a colander and rinse under running water. Rinse thoroughly, since the uneven surface of the berries retains dust well. Let the washed strawberries dry a little.

Pour granulated sugar into the container in which we will cook the jam and fill it with the specified amount of water. We put the container on the stove. With constant stirring, bring the syrup to a boil. The sugar crystals should completely dissolve, and the syrup itself should thicken. This will take approximately fifteen to twenty minutes. When the syrup flows down a thick stream from the spoon, it is ready.

Pour the prepared meadow strawberries into the resulting syrup, mix and bring the mass to a boil. After boiling, add citric acid and cook the jam for five minutes. Remove the container from the stove and let the jam cool completely. After cooling the berries, bring to a boil again and cook for five minutes. We repeat this sequence one more time. After the last five-minute cooking, we immediately pour the hot jam into pre-sterilized dry jars, close with dry sterile lids. Let the jars of jam cool and put them in a cool dark place for storage.
