Strawberry jam with agar-agar turns out to be of a marmalade consistency with whole fragrant strawberries, because we will cook for only 5 minutes. The amount of agar-agar is determined by its brand, otherwise the gel strength is from 600 to 1200, so determine its amount according to the instructions and your taste. You can determine the correct dosage yourself. To do this, place a little syrup in the freezer for 1 minute and evaluate its thickness. Add some lemon juice to the jam to preserve the bright color of the strawberry and emphasize its flavor.

Choose a thick and pretty strawberry for this jam. Rinse the berries with cold water, remove the sepals and remove excess moisture with a kitchen towel. Cut half of the washed lemon into thin slices. Put the prepared strawberries, lemon slices into a bowl for making jam and cover with sugar in the calculated amount. Cover the pot with a napkin and leave for 5-7 hours for the berry to give its juice.
