Strawberry jam in syrup

Delicious homemade jams are usually berries floating in a thick, sweet syrup. This cooking method can be called the most gentle for berries and fruits, since they are subjected to short heat treatment in several passes.

Sort out the strawberries, wash the berries, cut off the green tails and discard them in a colander to drain the water.

Make sweet syrup. Pour sugar into a separate container and pour 200 ml into it. water. Bring the syrup to a boil, stirring constantly and simmer for 5-7 minutes, until it thickens.

Dip the berries in hot syrup, stir gently and leave to cool for 10-12 hours. During this time, the berries will start juice and the syrup will increase in volume.

Then, using a slotted spoon, remove the berries from the syrup. Put the syrup on the fire again, bring to a boil and cook for 5-7 minutes.

Dip the berries in hot syrup again and leave for 10-12 hours, during this time it is recommended to mix the berries in the syrup several times. Repeat this procedure 1-2 more times.

Bring the syrup to a boil for the last time, boil for 5-7 minutes, then put the berries in it, bring the jam to a boil and put it in dry sterilized jars. If the berries were watery and the syrup turns out to be very liquid, then the last time it can be boiled for a little more than 15-20 minutes. Such a wonderful jam is delicious with tea and homemade pancakes.

This amount of water will NOT dissolve that amount of sugar. I had to add up to 150 g and lemon juice.
