Red currant jam through a meat grinder

Jam prepared in this way is called raw. The berries are not boiled in it, so the currants retain all their taste and useful properties. In order for such a jam to be well stored, the berry must be scalded with boiling water, and the dishes with which the berries come in contact must be clean and as sterile as possible. Sugar and berries for this jam are taken in a ratio of 1.5: 1.

Sort out the red currants, remove small debris and separate the berries from the branches. Then rinse the currants well and place on a sieve or in a colander.

Scald the berries in a colander with boiling water. The boiling water will kill germs on the surface of the berries and activate the berry pectin, which will allow the jam to become thicker.

Then put the currants in a separate bowl, add the calculated amount of sugar to it and stir to completely dissolve the sugar.

Twist the mixture of berries and sugar in a meat grinder with a fine grid. Wipe the resulting mass on a sieve to separate small pieces of peel with seeds and make the jam tender.

Do not throw away the berry cake, but prepare fruit drink or jelly from it.
