Rose petal jam with lemon

Rose Petal Jam is an incredibly aromatic jam with a delicate texture that is a delicacy. After all, you cannot buy such a delicacy in a store, it must be prepared with your own hands at home. In our recipe, we used as little liquid as possible so as not to dilute the natural juice from rose petals, which was released when rubbing the petals with our hands. The lemon juice, which we add during the preparation process, will add a pleasant sourness to the jam and complement the taste of the rose with citrus notes.

Separate the tea rose petals from the buds, sort them out so that only good quality petals go into the jam. If the roses are not homemade, they must be carefully washed by pouring a small amount of cool water, then removed from the water without damaging the petals. After that, it is best to dry the petals on a cotton towel to remove excess moisture. Put dry petals in a bowl and cover with 500 grams of sugar.

Then we rub the petals with our hands so that moisture begins to stand out from them, after which we add the juice of one lemon.

We leave the grated mass at room temperature for 3-4 hours, so that the petals let out the juice, and the sugar melts a little. During this time, we prepare the syrup: pour water into the stewpan, add sugar and put the stewpan over medium heat. Bring the mass to a boil, stirring occasionally so that the sugar is completely dissolved, and remove the syrup from the heat. Pour the petals with the resulting syrup, mix well and put the container with jam on medium heat. Bring the mass to a boil, mix with a wooden spoon and remove from heat. Leave the jam at room temperature until it cools completely. Then bring to a boil again. We carry out this procedure 4-5 times until the unnecessary liquid evaporates from the jam and it acquires the consistency you need.

We lay out the finished hot jam on pre-sterilized jars and close tightly with boiled lids. Turn the jars of jam upside down and leave at room temperature until they cool completely.

Put the completely cooled jam in a cool dark place for storage.
