Wild strawberry jam with tails

Forest strawberries are good for everyone - aromatic, sweet and healthy. But it takes a huge amount of time to separate the sepals from this berry. If there are no assistants, it is difficult, and many are stopped from the idea of ​​making, for example, jam. You can simplify the process and "allow" the berries to cook together with sepals. The only unshakable condition is, of course, thorough rinsing of the raw materials, since it retains dust well.

We carefully sort out the strawberries and throw away random garbage and defective berries. Place the prepared berries in a colander in portions and rinse under running water. Let the berries dry. Then put the forest strawberries in a bowl for making jam and cover with granulated sugar. Mix and cover the container with a clean towel. We leave the strawberries with sugar for five to six hours so that the juice stands out.

After that, put the dishes with berries on the stove and bring the contents to a boil. Stir occasionally. After boiling, cook for five minutes, skimming off the foam. Remove from the stove and let the jam stand for a day so that the berries and sepals are well saturated with syrup and soften.

After the specified time has elapsed, put the jam on the stove again and heat to a boil. After boiling, add citric acid and cook for fifteen to twenty minutes.

We pack hot jam in pre-sterilized dry jars and close with dry clean lids. We remove the cooled jars with jam to the storage place.
