Soft pear jam

It is impossible to make beautiful jam in slices from soft pears, but you can make jam from them, which distinguishes it from other desserts by its special aroma and taste. For reliable storage, citric acid is added to the jam at the rate of 1 gram of lemon per 1 kilogram of fruit. Various spices can be added to this delicacy.

Rinse soft pears with warm water and pat dry with a towel. Then remove the damaged areas, seed pods and stalks. Cut the pears into small pieces and transfer to a jam pot. Pour the pears with water and cook for 20 minutes over low heat. You can pour the broth. Grind the boiled pears on a sieve to remove the cake.

Whisk the resulting pear puree with a hand blender.

Then pour the calculated amount of sugar and citric acid into the puree. Stir the puree and cook for another 20 minutes over low heat. Cook under a covered lid and stir periodically with a wooden spoon.

Pour hot pear jam into previously sterilized jars and seal hermetically with boiled lids. Cool the jars upside down and under a "fur coat". Then store the jam in a cool place.
