Unripe watermelon jam

The pulp of the watermelon is covered with sugar and filled with water. The released juice is poured into a saucepan and brought to a boil. Then lemon juice and pieces of watermelon are added there. Everything is cooked for about 20 minutes, after which it is poured into sterilized jars.

We wash the watermelon thoroughly under running water. Cut the pulp into small pieces and remove the seeds.

We shift the chopped pulp into a suitable container, fill it with half granulated sugar and fill it with water. Let it stand for the watermelon to start pouring juice.

Next, pour the resulting juice into a deep saucepan. Pour in the remaining sugar and mix everything well.

Put the saucepan over medium heat and bring to a boil. Next, reduce the heat and cook until the syrup begins to thicken. Stir occasionally.

Add the juice of a whole lemon and mix again.

Now we send the chopped watermelon to the resulting syrup. Bring the jam to a boil over medium heat, then reduce it and cook for 20-25 minutes. Remove the resulting foam and stir periodically.

Remove the pan from the stove and let the jam brew for several hours. After complete cooling, return it to low heat and cook for about half an hour until fully cooked, stirring often.

We pour the jam into pre-sterilized jars and roll up the lids. Turn it upside down and leave it to cool completely. Now we send it to a suitable storage location. We use jam in cooking or use it in its pure form. Bon Appetit!
