Collect the quantity of dandelion heads that will fill a 0.5 liter glass jar. Place the dandelions in a bowl, rinse in cold water. Then pour water over the flowers and leave for 2-3 hours to remove excess bitterness.

Drain the water, and transfer the flower heads themselves to a saucepan, squeezing the water out of them.

Cut the lemon in half, squeeze the juice out of half. Remove the zest with a special fine grater, without touching the white part of the peel. Pour dandelions with liquid honey, add lemon zest, lemon juice, ginger, grated on a fine grater. You can also add sliced ​​lemon slices.

Mix everything thoroughly and pour into a half-liter sterile jar. Screw the lid on the jar and leave it in a dark place to infuse for 3 weeks.
