Dandelion jam with flower petals

You can cook dandelion jam directly with flower petals. This delicacy has a specific herbal flavor, but at the same time it smells beautifully with honey and citrus fruits. And to enrich the aromatic bouquet, you can also add cinnamon powder or a cinnamon stick here.

Remove the heads from dandelions collected away from the track. Soak 300 heads, and cut off the petals of the remaining flowers and put them separately without soaking.

Rinse the buds and re-fill with water, holding for 6 hours, so that the bitterness goes away.

Then squeeze the buds and rinse in clean water, let it drain. Pour a liter of water into a saucepan, add 300 buds and cook them for 10-15 minutes. When this broth has cooled, strain it through a sieve.

Put the cut flower petals in a clean broth and bring this syrup to a boil over low heat. During this time, rinse the orange and lemon well, remove the seeds by chopping the fruit finely.

Add citrus fruits to the boiling syrup and, while stirring, simmer all together for 20 minutes. Let the future jam cool, strain it through cheesecloth. Send half of the petals in a saucepan with syrup, and remove half. Put the citrus chunks back into the jam as well.

Finally, add sugar and boil the dandelion jam to the desired thickness for at least an hour.

Pour the finished dandelion jam into jars and roll up hermetically, and when it cools down, put the jars in a cold cellar for storage or hide in the refrigerator.
