Overripe pear jam

Overripe pears cannot be preserved, and it is impossible to eat all the pears, but the jam from them turns out to be very fragrant and tender. An overripe pear is always juicy, so you don't need to add water to the jam, and besides, if your pears are sweet, then the amount of sugar can be halved. This jam is very suitable for homemade baked goods.

Wash overripe pears, remove the peel and seed pods and cut the pear into small pieces. Then place the chopped pear in the jam pot.

Pour a third of the amount of sugar indicated in the recipe to the pears and leave it for 4 hours so that the pear gives juice. Then put a saucepan with pears in sugar syrup on the stove, bring to a boil over medium heat and cook for 7 minutes over low heat.

Grind boiled pears in mashed potatoes with an immersion blender or grind on a sieve.

Pour the cooked puree into a wide basin (you need to evaporate the liquid as much as possible), add the rest of the sugar, mix and cook over low heat until the jam is thick. It takes 1 hour. You can increase the cooking time of the jam to make it thicker.

Stir the jam during cooking so that it does not burn and the liquid evaporates better. If by the end of cooking the jam is not thick enough, then add a little starch to it, then it will not spread in homemade baked goods.

Pour hot jam from overripe pears into dry sterile jars.

Close the jars with boiled lids and, after cooling, transfer to storage in a cool place.
