Garden Victoria Jam is a stunning sweet, aromatic, bright red delicacy that no one can resist the aroma of. Victoria contains natural pectin in its composition, so the jam from it always turns out to be thick, especially if you do not regret sugar. But you shouldn't save on the preparation of such a delicacy!

If possible, ripe and strong Victoria berries are best harvested 1-2 hours before making the jam, so that the berry is fresh. We wash the berries under a stream of cool running water, remove the stalks.

It is most convenient to cook the jam in a container with a thick bottom: during cooking, the sugar syrup will not burn to the bottom, and the cooking time is significantly reduced. Put the victoria berries in a saucepan with a thick bottom and cover with sugar. Stir the berries with a spoon and leave for 1-1.5 hours so that they let the juice out, and the sugar dissolves a little.

After an hour and a half, it becomes clear that Victoria has started up the juice and is ready to cook.

We put the saucepan over medium heat, bring the berries to a boil. After boiling with a spoon, remove the resulting foam, reduce the heat to low and cook the jam for 30 minutes, periodically remembering to stir so that the jam boils evenly. During this time, we rinse the cans with baking soda, put them in the oven with the neck down and sterilize for 7-10 minutes at a temperature of 110-120 degrees.

Put the finished hot jam in the jars, without reporting 1-1.5 cm to the edge of the jar, close the lids tightly and leave the jam to cool at room temperature.

After complete cooling, the finished jam can be tasted. We put the rest of the jars with jam for storage in a dark cool place, where it can be stored for several months and will not lose its taste and bright saturated color.
