It is not known whether Georgians have anything to do with this plum jam recipe. Probably the rich aroma of spices and a large amount of nuts gave a reason to associate this delicious jam with Georgian culinary traditions. Anyway, every housewife should have a couple of jars of this plum-nut sweetness in stock. The taste of the jam resembles candy - rich, aromatic, with intense notes of nuts and cinnamon.

We wash the plums thoroughly, discard the fruit with defects. Dry the plums and cut each in half. We remove the bones.

Place the peeled plums in a deep bowl and add the specified amount of granulated sugar.

Leave the plums with sugar for several hours at room temperature so that a sufficient amount of juice is released. It is convenient to leave the preparation overnight, and in the morning to continue cooking the jam.

After the specified time has elapsed, put the dishes with plums on the stove and bring the contents to a boil. Cook for three to four minutes. Remove from the stove and let the mass cool completely. Then heat it up again and cook for a few minutes. We repeat this sequence two more times.

Before the final cooking, add peeled walnuts, ginger and cinnamon sticks to the jam. Nuts can be added in large chunks, or you can grind them into smaller pieces - it's a matter of taste. It is recommended to split cinnamon sticks lengthwise into several parts - this way cinnamon will give more flavor.

We bring the jam with aromatic additives to a boil and cook for five minutes. Then we remove from the stove.

We lay out hot jam on prepared sterilized jars and close with dry sterile lids. Let the workpiece cool completely and put it in a cool dark place for storage.
