Plum jam transparent

To preserve the transparency of the jam and the integrity of the plum slices as much as possible, we cook the jam in several steps. This gentle method of cooking avoids boiling of the plum pulp and cloudiness of the syrup, while the plum pieces are well soaked and remain soft.

Wash the plums thoroughly, discard the defective fruits. Let the plums dry. Then we cut each fruit into two parts, remove the bone.

Place the prepared cleaned plum in a wide saucepan. To prepare the syrup, mix water with granulated sugar in a separate bowl.

Bring the mixture to a boil, without ceasing to stir, so that the sugar crystals dissolve faster and the syrup does not burn. Pour the plum in a saucepan with the resulting syrup and leave it for several hours so that the fruits let out the juice.

Place the pot on the stove and bring the contents to a boil. Cook for five minutes, keeping the boil low, and remove from the stove. We leave the jam for eight hours.

We repeat this sequence three more times.

After the final cooking, pour the finished jam into dry sterilized jars and close with sterilized lids. Let the jars cool completely and place them in a cool and dark storage area.
