It is convenient to cook such jam if there are plums with hard-to-separate pits. Cooking takes place in a gentle way and does not exceed five minutes at a time, thanks to which the valuable substances of the fruit are preserved. Long-term infusion of the jam before cooking allows the plums to soak well with sugar syrup and acquire a soft, viscous, “dessert” pulp.

Rinse the plums thoroughly. Discard fruits with damage, wormholes and other defects. Let the washed fruits dry slightly by placing them in a colander. Pour two and a half liters of water into a large saucepan and bring it to a boil. Immerse the plums in boiling water, turn off the stove and keep the fruits in water for five minutes. Then we carefully discard the fruits in a colander and let the excess liquid drain. After the plums have cooled down a little, we pierce each with a toothpick in several places. This is necessary so that the syrup penetrates evenly into the fruit.

Pour sugar into a container suitable for cooking jam and pour in the specified amount of water. We put the container on the stove at a low temperature and with constant continuous stirring we achieve the dissolution and melting of sugar. Bring the syrup to a boil and dip the prepared plums into it. Mix and cook for five minutes. We remove the foam. After the specified time has elapsed, remove the jam from the stove and leave it for six hours.

After that, put the jam on the stove again, bring to a boil and cook for five minutes, removing the foam. Again we leave for six hours. And we repeat this sequence one more final time.

After the third five-minute boiling, pour the hot jam immediately into dry, pre-sterilized jars and close with dry sterilized lids. Allow the jars of jam to cool and store in a cool, dark place for storage.
