I want to share a recipe for an unusual and very interesting plum jam with chocolate and cognac. The jam turns out to be very aromatic with an amazing taste and a uniform thick consistency.

Prepare the ingredients for the chocolate and cognac plum jam.

Sort out large plums and rinse gently under cold running water. Leave the berries on for a while to allow the excess liquid to glass.

Cut the washed plums in half and remove the seeds. Place the prepared plums in a deep saucepan with a thick bottom.

Wash the lemon thoroughly and cut in half. Squeeze out the juice. Pour the lemon juice over the halves of the plums. Add granulated sugar. Place the pot over low heat. Stir until the granulated sugar crystals are completely dissolved. Cook for about 10-15 minutes.

Remove from heat, cool slightly, blend with an immersion blender until smooth.

Add a tablespoon of pectin to the resulting mass.
