Plum jam with butter

Plum jam is always very tasty: it is viscous, thick, with a rich, dessert taste. The addition of butter is an interesting technique that complements the taste of the finished jam with a delicate creamy hue. Of course, only good quality butter should be used with a maximum fat percentage. We add it by all means at the end of cooking.

We wash the plums, discard the defective fruits. Let the washed plums dry a little. We cut each plum in half and remove the seeds. Fill the plums with granulated sugar, mix and leave for a couple of hours for the juice to appear. Then mix again and put on the stove at a medium intensity temperature. Bring the jam to a boil with constant stirring. Cook it at low temperature for fifteen minutes.

Then remove from the stove and puree with a hand blender.

We put the container back on the stove, bring to a boil and boil for half an hour, stirring occasionally to avoid burning. At the end of cooking, add butter and let it melt, stir, cook for five minutes and remove from the stove.

Pour the finished hot jam into pre-sterilized jars and close with dry sterile lids. Let the jars of jam cool completely and put them in a cool, dark storage place.
