Earlier, you and I prepared jam from pine cones with orange, it turned out to be tasty and healthy, with a pleasant orange aroma. Today we will make honey jam. Honey successfully complements the pine flavor, and the healthy honey dessert will sparkle with new aftertaste notes.

Young green pine cones must be harvested early in the season (late May - early June). We wash the cones well in warm running water from dust and separate them from the branches. Put the cones in a saucepan and fill with cold boiled water so that it completely covers the cones. We leave them to soak for 24 hours.

After a day, we drain the liquid from the cones and pour in two liters of cooled boiled water. We put the container on medium heat and bring to a boil, the process takes 20-25 minutes. After boiling, remove the resulting foam and add honey. Stir the jam with a spoon and bring to a boil again. Then we remove the jam from the heat and leave to let the jam infuse and cool down a little.

At this time, we rinse the jam jars with baking soda, rinse well with water and sterilize for 5-7 minutes over steam. Then we remove the cans and let them cool.
