Today we will make gooseberry jam with lemon juice, which will give the berries a pleasant citrus aroma and light sourness.

After the time has elapsed, we put the berries on the fire, add water, since usually not much juice is released from the berries. Bring the mixture to a boil over low heat and remove the foam. Boil the berries for 5-7 minutes, stirring occasionally, and remove from heat. Leave the mass to cool for 5-6 hours at room temperature.

Add the remaining sugar to the cooled jam, mix well and put on low heat again. Bring the mass to a boil, remove the foam, add lemon juice. Boil the jam for 7-10 minutes, stir with a wooden spoon so that the jam does not burn, and remove from heat.

We wash glass jars well, sterilize in the oven at a temperature of 110-120 degrees for 10-15 minutes. Boil the lids. We put the warm jam on the jars, screw the lids and turn the jars with the lid down. We leave the jam to cool at room temperature, you can cover the jars with a towel. After the jam has cooled down, you can put it away in a dark place. You can start tasting!
