Victoria Jam with Agar Agar

To thicken the garden strawberry jam, you need to either cook it for a long time or increase the amount of sugar. Using a natural agar-agar thickener in the recipe, the jam will turn out to be fragrant and thick with pieces of berries in just 25 minutes.

Ingredients

Cooking process

step 1 out of 5
Gently rinse the strawberries and remove the leaves and tails. Cut the berries into several small pieces and place in a saucepan.
step 2 out of 5
Add sugar to a saucepan and stir with a wooden spatula.
step 3 out of 5
Cover the berries with a towel or lid and let sit for 3 hours to form juice. Combine agar with water in a separate bowl, stir and leave for 20 minutes.
step 4 out of 5
Put the saucepan with berries on low heat and boil, stirring occasionally. Add oil to reduce foam formation. When the berry starts to boil again, add agar-agar, mix and cook over low heat for 20 minutes.
step 5 out of 5
Pour the jam into sterile prepared jars and screw the lids boiled for 10 minutes. Turn them upside down and cover with a blanket. Leave to cool for 6 hours. During this time, it is necessary to turn the container 3 times to mix the berries with the gelling agent and solidify evenly.
