During the cooking process, cherries do not boil down into gruel. Often, cherry jam is a liquid syrup with berries. According to our recipe, you can make a thick, homogeneous cherry jam.

Wash the cherries, sort out twigs, leaves, bad and spoiled berries. Carefully remove the seeds from the berries.

Place the berries in an enamel bowl or saucepan and cover with sugar. Leave the berries under sugar for three hours. After this time, the cherry will release juice, add a glass of water to the berry mass.

Put the container on low heat, constantly stirring the berry mass, cook until the sugar dissolves. When the sugar is completely dissolved, turn up the heat and bring the jam to a boil, scoop up the froth from the surface with a spoon, and remove the pan from the heat. Strain the syrup from the berries. Cook the syrup separately until it boils, then transfer the berries to it.
