Such a jam is very often rolled up for the winter, because, due to the peculiarities of preparation, many vitamins are stored in apples, and spicy spices make the jam very fragrant.

Rinse the apples thoroughly under running water and pat dry with a towel. Cut the core and divide the flesh into small wedges without peeling the peels off the apples.

Place the wedges in a deep saucepan, pouring sugar into them in layers. Shake the container so that it wakes up deeper, and set the apples to infuse at room temperature for 10-12 hours.

After this time, a sufficient amount of juice will be released from the apples, and the sugar should be completely dissolved. Add spices to the wedges, put the pan on the fire and bring the liquid to a boil on maximum heat. Reduce heat and simmer apples in boiling syrup, about 5 minutes.

Remove the pan from heat and leave the apples to cool completely, this takes about 5 hours. Then it must be put back on the stove and boiled, but already at medium power. Boil the jam again 5 minutes after boiling and leave to cool completely.

This procedure must be repeated 3-4 times, depending on what color and consistency you want the jam. With each cooking, it will turn from amber to caramel, acquire a more intense and sugary taste.

After the last cooking, pour the jam into previously sterilized jars and screw the lids tightly. Make the seams upside down, wrap with a towel and leave to cool completely.
